EVERYDAY RECIPE: FRESH JUICY SALAD (WINTER & SUMMER VERSION)

Today I want to share with you one of my favourite recipes that you can adapt to summer or winter.

You probably have realized that being a mother of 3, with a husband, 2 dogs, 2 businesses and a job I always look for quick and easy solutions to fit my lifestyle. And I hope you are going to enjoy this quick fresh and warmly salad as much as I do!

When I first saw it I wasn’t sure how the mix of the citrus fruit and juices would work together, but once I tasted it I got hooked and every time I prepare it for guests, it’s always a winner.

WINTER VERSION: ROCKET SALAD WITH CITRUS FRUIT

Ingredients:

1 orange

1 pink grapefruit

1 lemon

1 tbsp honey

1 tbsp extra virgin olive oil

1 tbsp sesame seeds

200g rocket

Salt & pepper

Black olives (optional)

Method:

Peel the citrus fruits and remove all the white pith. Cut them in pieces and catch all the juice in a bowl.

Squeeze all the scraps by hand, mix all the juices with the honey, olive oil, salt and pepper to taste.

Pour it over the rocket, fruit pieces and olives and sprinkle with the seeds.

SUMMER VERSION: ROCKET SALAD WITH WATERMELON

Ingredients:

1 lemon

1 tbsp honey

1 tbsp extra virgin olive oil

1 tbsp sesame seeds

200g rocket

Salt & pepper

1/8th seedless watermelon, rind removed, cut into 2cm cubes

Feta cheese or salty ricotta or gorgonzola

Black olives

Method:

Whisk together the lemon juice, honey, salt and pepper and the olive oil.

Place the rocket, watermelon, cheese and olives in a large bowl.

Drizzle with the dressing and the seeds. Toss well. Taste for seasonings and serve immediately.
